Executive Summary

The fourth edition of the most comprehensive primary study of the luxury breakfast service in five-star and palace-class hotels. Based on 412 properties across 38 markets, 1,847 guest interviews and 96 in-residence service audits conducted between March 2025 and January 2026.

  1. 01

    Breakfast is the single experience most often cited by guests when asked what they remember from a stay (43% — versus dinner at 19%).

  2. 02

    Properties that invested in single-estate juice and freshly milled flour for the breakfast service reported a 7-point uplift in NPS over twenty-four months.

  3. 03

    Average revenue per breakfast cover at the surveyed properties rose 11.2% year-on-year, against a 3.4% rise in cost of goods.

  4. 04

    The fastest-growing breakfast category by guest preference is fermented and cultured foods (kefir, miso, kimchi, sourdough) — up 28% in two years.
